Kim Kocht, is an achievement in itself – she has spurned many an offer to expand, preferring to retain the personal touch. Once you are there, you feel like you have entered into an exclusive coterie, joined not by birth, but by a desire to be nourished by this bird- like creature. Kim tailors the menu and daily shopping according to who is joining her for dinner, adopting a holistic approach. ‘I cannot heal, but I can bring joy,' she says.

Kim dreams up new recipes in the small hours, drawing them before creating them; her initial training as a designer (‘not really my life') showing through. Her signature dish – lightly seared tuna burger with pancetta – is a work of art in itself. Her holidays are spent searching for new taste sensations.
